Permissions issues - unraid/docker/emby (auto orgainze)

I have been working around this issue for quite some time, previously on openmediavault docker (which I thought might have been result of windows remote-mount) and now on unraid (native array)...
I am using other dockers such as qbittorrentvpn, *arr, and other things which all seem to keep things consistent using the defaults of user/group (99/100 or nobody/users) and I am using a umask=002.  When the *arr(s) moves files and creates metadata the expected 775/664 permissions are set... however when emby comes back around and makes the .bif and pulls any needed subtitles, they are given the 644... which is an issue when managing these files from windows/smb.  I originally thought this had to do more with the auto-organize plugin, because when AO creates a movie folder it is give 755 (not 775) but interestingly enough the actual movie file itself is 664 (not expected 644) so it is doing a move... which is also as I would expect having that opting checked in the settings... but still all of the metadata in downloaded afterwards is 644. 
I am using the official emby docker (not ls.io or binhex's) and thought as of yesterday that it was my fault for leaving the GIDLIST=2 (for whatever reason the UID/GID/GIDLIST were all defualt=2) so I was hoping setting it to 100 would make a difference, it didn't, although I am still piecing together the function of the gidlist variable.

TLDR;
How can I make the embyserver docker create files with group write permissions? I am sure it's something I am overlooking or misunderstanding...

Not particularly, I had skimmed through that as well as referenced links within... but I will spend some time in the morning re-reading and double checking.

He was using the unassigned devices to remote-mount another unraid server (using either nfs or smb has things to overcome) while I am actually just using a mount to the local array (same way that all my other dockers are doing and not having this issue).. I am going to either building a second docker (either using the official or maybe another template) and restore my settings and see what's what... it seems like this shouldn't be a problem (or else I could find other people having this issue) so I need to take a step back and look at it with fresh eyes tomorrow.

EDIT: also I never mentioned that if I open a terminal in the embyserver docker and make a folder manually it still only has 755 (the same happens in radarr and qbittorrentvpn as well) however when qbittorrentvpn creates a file on download it has the 775 permissions... and radarr keeps those when it moves them from the download folder to the array... so I am just fundamentally not grokking perms..  and everything WORKS in emby, that isn't the issue, the issue is trying to add/delete these files without the wtite permission for the group my smb access has..  I feel like something is gonna click -- hopefully and "ah-ha" moment is coming... :)
