Watching the episode while it is still being recorded.

I can't watch an episode while it is still being recorded. In this cicumstance, I would like to be able to start the episode from the beginning of the recording

That is impossible to do. Instead it starts to play from the current time and it is impossible to seek back to the beginning.

Once the episode finished recording, I can finally start the episode from the beginning and I can seek. 

The recordings are .ts files. I am using Emby Theater on Windows for playback and I play the episode from the TV Guide view.

This functionality is a pretty basic requirement for a PVR so it is pretty frustrating that it doesn't work.

The TV Guide view links to the live transmission, not the recording. Have you tried playing from the Recordings Library view?  I successfully watch unfinished recordings from the start from time to time.

This depends on the client being used. Some clients will prompt you when you play from the guide and it's recording and ask if you want to start at the beginning or go live.
