Was muss wo eingestellt werden, dass die Sprache Deutsch oder Englisch ist?

you mean those settings?:

they are set to German

Those are your library metadata options.

Inside the app there is also the language option for things like the buttons in the app.

Unfortunately I have the same problem.
Emby is supposed to fetch the German MetaData from TheAudioDB, but shows the Spanish ones.
In the log file you can see which JSON information Emby fetches from TheAudioDb and that all information is contained in the JSON data.
But instead of using the info about the token "strDescriptionDE", the info about the token "strDescriptionES" is displayed.
