I have to sign out of emby connect in order to switch users. Every user has to do this. In the settings I even have it setup to show the users at login rather than default into a certain account. Emby Connect is designed as a quick "straight in" method of attaching a single user to your server so you cannot switch users when using that method. If you wish to switch users, use the direct server selection (or manual entry) method of connecting and then you can select users as well. Please let us know if this answers your question. Thanks.
