First, sorry for my bad english.

I'm having issues with external (srt) subtitles on emby app (Nvidia Shield).

The size of the subtitle changes according to the aspect ratio of the video.

The size of subtitle on 16x9 video is very good. On 21x9 video, the size is very small and dificult to read.

There any configuration that can i replicate the size of 16x9 subtitle on 21x9 videos?

I believe the player is scaling and positioning these to ensure they are within the video frame but can you also ensure that the two different items are playing back the same exact way and the subs are the same format?

Yes, i confirm these subtitles formats are the same. I verify codec types, resolution, etc. The only one big thing that i noted was the diferent aspect ratio.

Are the two items playing the exact same way.

IOW - is one direct playing while the other is transcoding etc.

Are any ffmpeg logs produced on playback of either one?

All direct playing and no log generated.

Okay, then the player is scaling the text in order to be sure it fits within the video window as I suspected.
