Which Linux to use?

We have a single build for all of them which produces a pretty consistent result. There is also the Docker route. So my suggestion would be to use the distro that you want to use.

If this is your first Linux computer I personally suggest Ubuntu. If you're not new to it, then like Luke said it doesn't really matter.

I have used Redhat and Centos mostly in the past, but I was not sure if Emby works the best on specific Distro or version?

I didn't even realize that you were the same person that was posting in the ffmpeg thread. I wouldn't have said anything about your first time with Linux. Only reason I like Ubuntu, or anything other than a RedHat based distro, is because they will be more up to date as far as dependencies go. For me this equals less problems. For some it means more problems. Just my two cents.
