I believe the Collections view on the Home Screen in the tvOS app is driven off the Home Screen settings for your user.

 

Take a look at the home screen settings in the web client and check the Collections view box. Then restart the tvOS app (the home screen doesn't automatically update) by either a) selecting the user button from the Home Screen and choosing Restart App or b ) double click the home button on the Apple TV remote and swipe up on the Emby app in the switcher and then go back into the app.
