Backup Question

So I have been using the backup plugin for a while and it works great.  I recently went ahead and did a Physical to Virtual migration for my Emby server to ESXi.  I also have a backup VM on a seperate ESXi host running that could take over if needed by a simply IP switch.

 

So here is what I'm wondering, right now the plan would be, switch IP's on the backup host, and then restore the latest Backup to get user accounts replicated, and watched state, etc synced.

 

Is it possible to just have Emby Server 1 back itself up directly to Server 2, by sharing out Server 2's config share?  If so, what root should I set for the share?
