I was recently streaming content using a fire stick plugged into a Roku TV. The Roku TV made a suggestion regarding the content I was playing from inside the Emby app. This made me realize that Roku TV is collecting information on the media I am streaming, processing/storing it using some type of algorithm, and then providing recommendations for what I should do next. Which led me to my question...

What type of information is passing to my Roku tv, or my fire stick, regarding the media I am streaming?

Hi. This is really a question for Roku or maybe Amazon since you said you were using a Fire stick but all of the store platforms have the ability to see the urls that you are accessing through their platforms.

The Roku uses Automatic Content Recognition and shares this information with ad partners. It is all anonymous, but it still can recognize the device by the ID, and usually can detect what you are watching too. So your avertisements shown on the Roku are targeted more towards what you would watch and etc when you have this enabled. Roku uses this to customize their ad experience in their apps this way. It also customizes the home screen this way with relevant ads.

You can OPT out of this on the Roku.

Inside Settings -> Privacy -> Smart TV Experience
[x] Use info from TV inputs
[x] Enable auto notifications

You want to disable both of those. You also want to investigate every option in your privacy settings on the Roku to opt-out of any there as well.

This is great feedback. Thank you. Interestingly, the note that the Roku TV sent me was an alternate way I could watch the media I was already watching. So they were fully aware of exactly what I was watching, and what other streaming platforms offer that media.
