Hello to all the awesome people of Emby. Today is the first day I noticed this. I don't recall setting up any type of automatic conversion schedule. Is this normal? Can someone explain "convert media" task for dummies? Thanks

You didn't have to, it'll be there by default.

Yes.

Three-dot menu on an item, one of the first selections near the top will be "Convert media", for when you want to convert actual file (container, video/audio codec, bitrate) to some other, like for example lowering quality/bitrate for a more friendly remote/mobile streaming and you don't want conversion to happen immediately. Also used when downloading/transferring to other devices where different quality/profile is selected.

So unless I manually choose something to be converted, nothing will be converted?

Nope. Or unless some of your users that have permission to Download media that requires transcoding does so.
