Don't know your platform but you need to adjust iNotify.

Depending on how much ram you have you could increase your database cache size from 96 to a higher value 128, 256, 512 but sort of depends on your library.db size.

Actually yes, @jonny761012 can you please look into all three of these and then let us know how things compare after resolving them?

For #1 - either increase the INotify limit or disable the realtime monitor for each library

For #2 - you enabled nfo saving but did not ensure that emby server has write access to  your media folders to do that.
