That's not a good baseline, as it's about processing 30-50 GB files.

Then an external ssd maybe 😉

at least not on an unraid volume. Maybe a folder on the host system disk.

If that's not possible, then take a screwdriver, open the case and add a new (or used) SATA drive to the system (but standalone - I mean to the chipset's SATA connectors, not as a RAID drive, not like you would probably add a drive normally).

If that doesn't get you to a working setup, you'll need to consider installing Emby on the host OS - that's the last resort in trying. The Emby packages are not invasive and not destructive, they don't mess with your system files, so I wouldn't be that much afraid of - but it's your decision.

Bottom line is:

  • So far you were focusing on showing everybody what's not working and how it wasn't working
  • Your new homework is to get it working on your system by doing everything differently from what you've done before
(because we already know that it's not an Emby problem)

Also use different files from a totally different source (e.g. www.demolandia.net).

i´ve just tried a fresh instance with a new share and a 2nd container and told emby to store the metadata in the moviedolder... that was working well for all data except the thumbs ^^

with a new share

I wish you good luck in finding the cause.
It's not an Emby issue, but I gave you pointers and a strategy to pinpoint.
What you make out of that is up to you.
