Hi, there is no special iTunes feature, but you can import a folder of media files into your Emby Server. To learn more, please see Library Setup. Please let us know if this helps. Thanks.

I get errors surrounding the built-in encryption on the media files themselves when I try to watch them in Emby.

Ok yes that's expected. We don't decrypt iTunes DRM.

You would need to run the video file through a DRM stripping utility.  They don't do that to music so nothing is required there, just make sure the tags are right and the folder structure is supported with your copied music.

Sorry, I don't know the answer about how to strip DRM from itunes videos. I'm sure you can find tools to do that on the web.

I think the last remaining tool to do this requires a Mac.  A while back you could do it on windows also but I don't think you can anymore.

I can personally tell you there are still tools to easily do this one windows. A quick google search yields dozens of them.
