In media browser theatre when I click on "folders" there are blank isons anyway to add icons to them just so we are clear see pic below.

Hmmm not sure what I did there just to be sure when I click on "folders" in mbt I get blank images How do I add a folder.jpeg to my collection groups? for example I have a folder :"blu ray" which houses blu ray movies but when I click on folders I just get a blank tile with blu ray written on it how do I add a jpeg to display on these tiles?

Go into Media Browser Dashboard then click on the "edit pencil" icon to get into Metadate Manager. There you can add images to your bluray folder and edit any movies as well.
