How can I make emby automatically add new files when they are copied to the directory.

Enable RTM.

But that depends on how you installed Emby what OS and what you folder paths are like.

You have providen less to nothing about you setup, so no quick solution from my part.

So I'm guessing

I have 6 or 7 folders, new videos, old, tv,music etc on local drives

Enable real time monitoring is all you should need to do. If it's not working there may be a permission error, so you'll have to provide logs.

On each individual library. Library section -> 3 dot menu on a library -> edit.

Note that the setting is for the detection of new items when the file system contents change.  If you have already got the files in place, then you may need to command a scan manually to get the process rolling.  (Right-click or three dot menu on the library on the home page.)
