I believe that is an option provided by a the Diamond theme and will make some adjustments to layouts and colors to work better on the 360.

Crystal and ROC also optimize screen usage on an Xbox 360.  They don't just use the extra space around the edges of the screen to show backdrops a bit bigger - the extra space is used to better position/fit content on-screen, not just a gap filled with pictures.
