I have replicated this on two servers because its just too weird, but it is the same on both servers.  (both linux, one on Ubuntu 22.04, the other on Mint Cinnamon.)

If I turn a photo field off with Roku,  a day later I can't turn it back on in any interface.  See the attached screen shots and note the field for the date shows up (spacing changes), and one lonely file gets a date.  This happens in all the clients I have.  Roku, Web, Google TV, and Android.

Hi, in the web app this could be caused by browsing data getting cleared.

And as above, tried it on my Roku, Google TV, and Android phone as well.

ALL do the same thing.  Like I said, once the field is turned off in Roku it won't show the data again.

If you're saying the checkbox gets unchecked then that is nothing to do with metadata, that is just the settings of the app you are using, and in this case, for the web app that means browsing data.

One thing at a time. Let's figure out what's going on in the web app and then we can move onto the others.

Cleaned cleared cache's and rebooted everything, and it seems to be working again.
