NFS + Native Apps + Direct mode playback issues

Running emby in a new docker instance and testing with a single shared media folder. Playback from web browser is fine (wireless), but the same stream from AppleTV (wired) or Android (wireless) is horrendously slow to start, or never starts.

With a second emby server running on a laptop, hosting the same video file directly from the laptop. The playback is generally good. 

Back to the docker server, If I change the AppleTV stream from Auto to 720p 1Mbps, the playback is fine? Trying some other options, 1080p 5Mpbs or above, the issue comes back.

The docker server media is a readonly NFS mount. If the same media is moved from NFS to local storage, the AppleTV direct playback works, however there is still a 2-3 start delay.

So something with my NFS + direct mode + AppleTV is not working (again, web playback is unaffected, even in direct mode)

This looks suspicious. AppleTV is making a range request for the entire 1.5GB file.
