Cool, making some progress, testing with 3.1.38:

FLAC 1.0 - Detected as PCM 2.0 by receiver and plays in PCM 2.0 without issue (some media players output PCM 1.0 as 1.0 and some output as 2.0, varies a lot by player so 2.0 isn't a big issue)

FLAC 2.0 - Detected as PCM 2.0 by receiver and plays in PCM 2.0 without issue - FIXED!

FLAC 5.1 - Detected as PCM 5.1 by receiver for ~1 second with no audio output, switches to AC3 5.1 after

FLAC 6.1 - Outputs as AC3 5.1 right from the start, no attempt at PCM 6.1. Not really a common format so not too worried, included for completion's sake

FLAC 5.1 - Detected as PCM 7.1 by receiver for ~1 second with no audio output, switches to AC3 5.1 after

Results above are with my test files, I did some further testing with real files. Splitting FLAC does something to break the FLAC formatting, and has served fine for testing with other players, but Emby doesn't seem to like them, as results are a bit different when the file is untouched:

FLAC 5.1 - Detected as PCM 5.1 by receiver and plays in PCM 5.1 when uninterrupted, but seeking around causes it to switch to AC3 5.1

FLAC 6.1 - Outputs as AC3 5.1 right from the start, no attempt at PCM 6.1 (again not too worried about this one)

FLAC 7.1 - Detected as PCM 7.1 by receiver and plays in PCM 7.1 a few seconds sometimes, but then switches to AC3 5.1
