Just before the recording is stopped emby reports (in the log) that IOS emby app has stopped live tv on the channel being recorded. E.g. yesterday, a 30 mins show has only 25 minutes recorded and an hour show had 53 minutes. I just started looking for answers, I'll look into my logs and see where's the best place to post them.
