If you try to add Emby by channel code (44191), it shows error: "The channel code provided is associated with a channel not available in your region.". Only Emby Beta can be installed. Selecting "United Kingdom" makes Emby show up in channel store. On my new account that I registered to a UK address, I can still see Emby if I change this setting to "United States". However, if I search for "emby", it still shows no results, but the search function seems to be broken (when the region is set to United States), because it really won't find anything no matter what you search. I linked my roku device to the new account I created with the UK address and I don't want to change this again.
