Hi,
I just got the Sony 65XF9005 (With the latest firmware) and tried playing the Mandalorian 4K HDR files (casting from app to the built in chromecast) and I also have the grey bars. I then downloaded the Emby app on the built in Android tv instead and tried as well, same story there. I then tried casting via the Plex app, same issue. BUT then I tried installing the Plex app on the android tv and there it looks fixed.
Is it a TV firmware issue or hardware issue? I just contacted Sony support so that they at least aware of it. You should do the same, maybe they are able to fix it in a new update?
