I'm using Windows 10.

Emby running as a server in the background.

Theater as GUI to watch shows.

When I watch a show in Emby via a browser I can get subtitles to work fine.

But when using the Theater GUI I can't find any way to turn them on??

Not positive since I don't have subtitles, click your user icon top right-settings-video player-enable subtitles

You can select / switch subtitles and audio languages using the LAV icon in the System Tray.

Not very handy, but it works.

If I remember correctly, the new Theater version will have a selection button in the GUI.

In Emby theater, I can hit the #8 button on my remote and it will bring up the GUI to switch subtitles and the audio track.

Exactly this. Pressing 8 will let you change Audio and subtitle options.
